Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract, then stir in the pumpkin puree.
- In another bowl, combine the oats, flour, pumpkin pie spice, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until edges are lightly golden.
- Allow cooling on the baking sheet for a few minutes before transferring to a wire rack.
