A deliciously warm and hearty soup with the classic flavors of a Reuben sandwich, made with turkey bacon and chicken ham.

Ingredients

  • 4 slices turkey bacon
  • 8 ounces chicken ham
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups sauerkraut, rinsed and drained
  • 1 cup shredded Swiss cheese
  • 1 cup heavy cream
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. Add the onion and garlic to the pot and sauté until softened.
  3. Pour in the chicken broth and add the sauerkraut. Bring to a simmer.
  4. Stir in the chicken ham and cook for 5 minutes.
  5. Mix the cornstarch and water in a small bowl to create a slurry, then add it to the soup.
  6. Stir in the heavy cream and Swiss cheese, cooking until the cheese has melted.
  7. Season with salt and pepper to taste.
  8. Serve hot, topped with crispy turkey bacon.
