Ingredients

  • 2 cups Rice Krispies
  • 1 cup mini marshmallows
  • 1/2 cup unsalted butter
  • 8 oz cream cheese
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Instructions

  1. Melt the butter in a large saucepan over low heat. Add the marshmallows and stir until completely melted.
  2. Remove from heat and add Rice Krispies. Stir until well coated.
  3. Press the mixture into the bottom of a greased springform pan and let cool.
  4. In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla, mixing until combined.
  5. In another bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
  6. Spread the cheesecake mixture over the cooled Rice Krispie base.
  7. Refrigerate for at least 4 hours or until set. Serve chilled.
