- 2 cups Rice Krispies
- 1 cup mini marshmallows
- 1/2 cup unsalted butter
- 8 oz cream cheese
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy cream
Instructions
- Melt the butter in a large saucepan over low heat. Add the marshmallows and stir until completely melted.
- Remove from heat and add Rice Krispies. Stir until well coated.
- Press the mixture into the bottom of a greased springform pan and let cool.
- In a mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla, mixing until combined.
- In another bowl, whip the heavy cream until stiff peaks form. Gently fold it into the cream cheese mixture.
- Spread the cheesecake mixture over the cooled Rice Krispie base.
- Refrigerate for at least 4 hours or until set. Serve chilled.
Notes
- For extra flavor, consider adding crushed graham crackers to the crust.
- Top with chocolate or caramel for added indulgence.
