- 2 pounds flank steak
- 1 pound baby potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the olive oil, garlic, rosemary, thyme, salt, and pepper. Add the flank steak and potatoes, tossing to coat.
- Place the flank steak on a roasting pan and arrange the potatoes around it.
- Roast in the oven for about 25-30 minutes, or until the steak reaches your desired level of doneness.
- Let the steak rest for 10 minutes before slicing. Serve with the roasted potatoes.
