- 2 pounds beef sirloin
- 1 pound baby potatoes
- 4 cloves garlic, minced

- 1 teaspoon dried thyme

Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix garlic, olive oil, salt, pepper, thyme, and rosemary.
- Rub the mixture all over the beef sirloin.
- Place the beef in a roasting pan and surround it with baby potatoes.
- Roast in the oven for about 1 hour, or until a meat thermometer reads 135°F (57°C) for medium-rare.
- Let the beef rest for 10 minutes before slicing.
- Serve with the roasted garlic potatoes.
