Ingredients

  • 2 large carrots
  • 1 ball of burrata cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wrap the beets in aluminum foil and roast for about 45 minutes.
  3. Meanwhile, slice the carrots and toss them with olive oil, salt, and pepper.
  4. Spread the carrots on a baking sheet and roast for 25-30 minutes.
  5. Once the beets are done, let them cool, peel and slice.
  6. In a large bowl, combine beets, carrots, lemon juice, and chopped parsley.
  7. Serve topped with burrata cheese and additional drizzle of olive oil.
