Ingredients

- 2 medium beets
- 2 large carrots
- 1 ball of burrata cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt to taste
- Fresh pepper to taste
- A handful of fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Wrap the beets in aluminum foil and roast for about 45 minutes.
- Meanwhile, slice the carrots and toss them with olive oil, salt, and pepper.
- Spread the carrots on a baking sheet and roast for 25-30 minutes.
- Once the beets are done, let them cool, peel and slice.
- In a large bowl, combine beets, carrots, lemon juice, and chopped parsley.
- Serve topped with burrata cheese and additional drizzle of olive oil.
Notes
- This salad can be served warm or cold.
- Try adding nuts for extra crunch.
