- 1 bunch carrots
- 1 cup ricotta cheese

Instructions
- Preheat the oven to 400°F (200°C).
- Wash and peel the carrots, then cut them into uniform sizes.
- Toss the carrots in olive oil, salt, and pepper.
- Spread the carrots on a baking sheet and roast for 25-30 minutes, or until tender and caramelized.
- In a bowl, whip the ricotta until smooth and creamy.
- Once carrots are done, transfer to a serving dish, top with whipped ricotta, and drizzle with hot honey.
