- 1 whole duck
- 4 cups potatoes, diced
- 2 cups bell peppers, sliced
- 1 cup mushrooms, sliced
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon thyme, dried
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Season the duck inside and out with salt, pepper, and thyme.
- Heat olive oil in a large pan and brown the duck on all sides.
- In a baking dish, combine potatoes, peppers, mushrooms, and garlic.
- Place the browned duck on top of the vegetables.
- Roast in the preheated oven for 1.5 to 2 hours, until the duck is fully cooked.
- Let the duck rest for 10 minutes before carving and serving.
Notes
- For extra crispy skin, increase the oven temperature to 400°F (200°C) during the last 15 minutes of cooking.
- Feel free to add other vegetables as desired.
