Ingredients

  • 1 whole duck
  • 4 cups potatoes, diced
  • 2 cups bell peppers, sliced
  • 1 cup mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon thyme, dried
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the duck inside and out with salt, pepper, and thyme.
  3. Heat olive oil in a large pan and brown the duck on all sides.
  4. In a baking dish, combine potatoes, peppers, mushrooms, and garlic.
  5. Place the browned duck on top of the vegetables.
  6. Roast in the preheated oven for 1.5 to 2 hours, until the duck is fully cooked.
  7. Let the duck rest for 10 minutes before carving and serving.

Notes

  • For extra crispy skin, increase the oven temperature to 400°F (200°C) during the last 15 minutes of cooking.
