- 2 pounds baby potatoes
- 1/2 cup unsalted butter
- 1 head garlic
- 1 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the potatoes in half and place them in a large mixing bowl.
- In a small saucepan, melt the butter over low heat, then add the garlic and cook until fragrant.
- Pour the roasted garlic butter over the potatoes and toss to coat.
- Spread the potatoes on a baking sheet and season with salt and pepper.
- Bake for 30-35 minutes, until golden brown and fork-tender.
- Remove from the oven and sprinkle with Parmesan cheese and parsley before serving.
