- 4 chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Make a pocket in each chicken breast by slicing them horizontally.
- In a bowl, mix the roasted red peppers and mozzarella cheese.
- Stuff each chicken breast with the mixture, securing with toothpicks if necessary.
- Rub olive oil on the outside of the chicken and season with garlic powder, Italian seasoning, salt, and pepper.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
- Let the chicken rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken in olive oil and seasonings for a couple of hours before cooking.
- Pair with a side salad or roasted vegetables for a complete meal.
