  • 1 cup roasted red peppers, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Make a pocket in each chicken breast by slicing them horizontally.
  3. In a bowl, mix the roasted red peppers and mozzarella cheese.
  4. Stuff each chicken breast with the mixture, securing with toothpicks if necessary.
  5. Rub olive oil on the outside of the chicken and season with garlic powder, Italian seasoning, salt, and pepper.
  6. Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  7. Let the chicken rest for a few minutes before serving.
