- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the roasted red peppers and mozzarella cheese together.
- Make a pocket in each chicken breast and stuff with the red pepper and mozzarella mixture.
- Season the outside of the chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Place the stuffed chicken in a baking dish.
- Bake for 25-30 minutes or until the chicken is cooked through and juices run clear.
Notes
- For a spicier kick, add some red pepper flakes to the stuffing.
- Pair with a side of vegetables or salad for a complete meal.
