- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder

Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the roasted red peppers, spinach, and mozzarella cheese.
- Slice a pocket into each chicken breast and stuff with the mixture.
- Drizzle olive oil over the chicken and season with garlic powder, onion powder, salt, and pepper.
- Place stuffed chicken in a baking dish and bake for 30-35 minutes, or until cooked through.
- Let rest for a few minutes before serving.

- For added flavor, marinate the chicken in olive oil and spices for a few hours before cooking.
