Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt to taste
  • pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the roasted red peppers, spinach, and mozzarella cheese.
  3. Slice a pocket into each chicken breast and stuff with the mixture.
  4. Drizzle olive oil over the chicken and season with garlic powder, onion powder, salt, and pepper.
  5. Place stuffed chicken in a baking dish and bake for 30-35 minutes, or until cooked through.
  6. Let rest for a few minutes before serving.
