- 4 boneless chicken breasts
- 1 cup roasted red peppers, sliced
- 1 cup fresh spinach
- 1 cup mozzarella cheese, shredded
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
- Cook chicken in the skillet for 5-7 minutes on each side until golden brown.
- Layer roasted red peppers and spinach on top of the chicken.
- Sprinkle mozzarella cheese over the top.
- Bake in the preheated oven for 20-25 minutes until chicken is cooked through.

- Serve with a side of rice or pasta for a complete meal.
