- 2 cups fresh strawberries, hulled and halved
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 cup ricotta cheese
- 2 tablespoons heavy cream
- 4 slices rustic bread
- 1 tablespoon olive oil
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine strawberries, honey, balsamic vinegar, and a pinch of salt. Toss to coat.
- Spread the strawberries onto a baking sheet and roast for 20 minutes, until caramelized.
- In another bowl, whisk together the ricotta and heavy cream until smooth and creamy.
- Brush the bread slices with olive oil and toast them in the oven or on a grill until golden.
- Spread whipped ricotta on the toasted bread and top with roasted strawberries.
- Serve immediately and enjoy!
Notes
- For a sweeter version, add more honey to the strawberries.
- Try adding fresh mint as a garnish for added flavor.
