Instructions
- Preheat your oven to 400°F (200°C).
- Peel and slice the sweet potatoes into rounds.
- In a bowl, toss the sweet potato rounds with olive oil, salt, and pepper.
- Arrange the sweet potato slices on a baking sheet in a single layer.
- Roast for about 25-30 minutes, flipping halfway through, until golden brown and tender.
- Remove from the oven and drizzle with honey and sprinkle with feta cheese and rosemary before serving.

- For a spicy kick, try adding some crushed red pepper flakes.
