Ingredients

- 2 cups rotisserie chicken, shredded
- 8 ounces mushrooms, sliced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 4 cups chicken broth
- 1 teaspoon thyme
- 1/2 teaspoon black pepper
- 1/2 cup heavy cream
Instructions
- In a large pot, sauté onions, carrots, and celery until soft.
- Add mushrooms and cook until they begin to soften.
- Stir in rotisserie chicken, broth, thyme, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in heavy cream and heat through before serving.
Notes
- This soup can be made ahead and stored in the refrigerator for a few days.
- Feel free to add any additional vegetables you like.
