- 4 medium potatoes, peeled and grated
- 1 large onion, thinly sliced
- 1 cup mushrooms, sliced
- 2 tablespoons butter
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat 1 tablespoon of butter and olive oil in a skillet over medium heat.
- Add the onions and cook until caramelized, about 15-20 minutes.
- Remove onions and set aside. In the same skillet, add more oil if needed and add the grated potatoes.
- Press the potatoes down to form a cake and cook until golden brown, about 5-7 minutes on each side.
- In a separate pan, sauté the mushrooms in butter until soft.
- Once the Rösti is cooked, top with caramelized onions and sautéed mushrooms before serving.
Notes
- Serve with a dollop of sour cream for added flavor.
- Feel free to add herbs such as thyme for additional taste.
