Ingredients

  • 4 medium potatoes, peeled and grated
  • 1 large onion, thinly sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat 1 tablespoon of butter and olive oil in a skillet over medium heat.
  2. Add the onions and cook until caramelized, about 15-20 minutes.
  3. Remove onions and set aside. In the same skillet, add more oil if needed and add the grated potatoes.
  4. Press the potatoes down to form a cake and cook until golden brown, about 5-7 minutes on each side.
  5. In a separate pan, sauté the mushrooms in butter until soft.
  6. Once the Rösti is cooked, top with caramelized onions and sautéed mushrooms before serving.

Notes

  • Serve with a dollop of sour cream for added flavor.
  • Feel free to add herbs such as thyme for additional taste.
