- 2 cups diced zucchini
- 1 cup diced bell peppers
- 1 cup diced red onion
- 3 cloves garlic, minced
- 1 can cannellini beans, drained and rinsed
- 2 tablespoons olive oil

- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the zucchini, bell peppers, red onion, and garlic.
- Add the cannellini beans, olive oil, oregano, salt, and pepper. Mix well.
- Spread the mixture onto a baking sheet in an even layer.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the vegetables are tender.
- Serve warm and enjoy!
