Ingredients

  • 2 chicken breasts
  • 4 ounces cream cheese
  • 1 cup spinach, chopped
  • 1/2 teaspoon garlic powder
  • 1/4 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix cream cheese, spinach, garlic powder, mozzarella, and Parmesan until well combined.
  3. Cut a pocket in each chicken breast and stuff with the cheese mixture.
  4. Secure the openings with toothpicks.
  5. Season the outside of the chicken with salt and pepper.
  6. Heat olive oil in a skillet over medium-high heat.
  7. Brown the chicken on both sides for about 3-4 minutes each.
  8. Transfer to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
