- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 2 cups beef broth
- 1 cup carrots, chopped
- 1 cup potatoes, diced
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- Salt to taste
- Pepper to taste
Instructions
- Preheat the oven to 325°F (165°C).
- In a large Dutch oven, heat olive oil over medium-high heat.
- Season the beef chuck roast with salt and pepper, then sear it on all sides until browned.
- Add the chopped vegetables and garlic, cooking for a few minutes until they begin to soften.
- Pour in the beef broth and add the fresh herbs.
- Cover and place in the preheated oven for 3-4 hours, until the meat is tender.
- Remove from the oven, let it rest for a few minutes, then serve.
Notes
- For extra flavor, consider marinating the roast overnight.
- Feel free to add additional vegetables like celery or parsnips.
