Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine shredded zucchini and salt. Let it sit for 10 minutes and then squeeze out excess water.
- In another bowl, whisk together eggs, garlic powder, and black pepper.
- Add the zucchini, feta, breadcrumbs, olive oil, and oregano to the egg mixture. Stir until well combined.
- Transfer the mixture to a greased baking dish and spread evenly.
- Bake for 30-35 minutes or until golden brown on top.
- Let cool for a few minutes before slicing and serving.
