- 1 cup long-grain rice

- 1/2 pound turkey bacon, chopped
- 1/2 pound chicken ham, diced
- 1 cup bell peppers, diced
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon Cajun seasoning
- Salt to taste
- Black pepper to taste
- Green onions for garnish
Instructions
- In a large skillet, cook the turkey bacon over medium heat until crispy.
- Add the chicken ham, bell peppers, onion, and garlic, and sauté until the vegetables are soft.
- Stir in the rice, seafood stock, thyme, Cajun seasoning, salt, and black pepper.
- Bring to a boil, then reduce heat and cover, simmering for about 20 minutes or until the rice is tender.
- Fluff the rice with a fork and garnish with green onions before serving.
Notes
- For extra flavor, use smoked turkey bacon.
- Feel free to add your favorite seafood, like shrimp or crab.
