Ingredients

  • 4 slices whole grain bread
  • 1 tablespoon olive oil
  • 4 eggs
  • 1 cup diced tomatoes
  • 1/2 cup bell pepper, diced
  • 1/4 cup onion, chopped
  • 2 slices turkey bacon
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a skillet, heat olive oil over medium heat. Add onion and bell pepper, sauté until soft.
  2. Add diced tomatoes, paprika, cumin, salt, and pepper. Simmer for about 8-10 minutes.
  3. Cook turkey bacon in a separate pan until crispy. Remove and chop.
  4. Make small wells in the sauce and crack an egg into each well. Cover and cook until the eggs are done to your liking.
  5. Meanwhile, toast the bread slices.
  6. Top each slice of toast with the shakshouka mixture and chopped turkey bacon. Garnish with cilantro and serve warm.

Notes

  • For extra flavor, add feta cheese on top before serving.
