- 4 slices whole grain bread
- 1 tablespoon olive oil
- 4 eggs
- 1 cup diced tomatoes
- 1/2 cup bell pepper, diced
- 1/4 cup onion, chopped
- 2 slices turkey bacon
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a skillet, heat olive oil over medium heat. Add onion and bell pepper, sauté until soft.
- Add diced tomatoes, paprika, cumin, salt, and pepper. Simmer for about 8-10 minutes.
- Cook turkey bacon in a separate pan until crispy. Remove and chop.
- Make small wells in the sauce and crack an egg into each well. Cover and cook until the eggs are done to your liking.
- Meanwhile, toast the bread slices.
- Top each slice of toast with the shakshouka mixture and chopped turkey bacon. Garnish with cilantro and serve warm.
Notes
- For extra flavor, add feta cheese on top before serving.
- This dish can be customized with different vegetables according to your preference.
