- 1 pound ground beef
- 1 cup carrots, diced
- 1 cup peas
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups mashed potatoes
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add onions and garlic, and sauté until translucent.
- Stir in carrots, peas, and cook for another 5 minutes.
- Add beef broth, Worcestershire sauce, thyme, and rosemary.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the mashed potatoes until well combined.
- Season with salt and pepper to taste.
- Serve hot.

- This soup can also be made with ground turkey or chicken for a lighter option.
