Ingredients

- 2 pounds chicken breasts
- 1/4 cup soy sauce
- 1/2 cup chicken broth
- 6 cloves garlic, minced
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Add chicken breasts and cook until browned on both sides.
- Pour in soy sauce and chicken broth, bring to a simmer.
- Cover and cook for 25-30 minutes until chicken is cooked through.
- Remove chicken and shred it with two forks.
- In a small bowl, mix cornstarch and water. Stir into the sauce in the skillet and cook until thickened.
- Return the shredded chicken to the skillet, mix well and season with salt and pepper to taste. Serve hot.
Notes
- For extra flavor, marinate the chicken in soy sauce and garlic for a few hours before cooking.
- This dish can be served over rice or noodles.
