Ingredients

- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 cup buttermilk
- 1/2 pound shrimp, peeled and deveined
- 1/2 pound crab meat
- 1 cup shredded cheese
- 1/4 cup diced jalapeños
- Oil for frying
Instructions
- In a large bowl, mix the flour, cornmeal, baking powder, and salt.
- In another bowl, whisk together the egg and buttermilk.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the shrimp, crab meat, cheese, and jalapeños.
- Heat oil in a deep fryer or large pot.
- Using a skewer, dip the shrimp and crab mixture into the batter and fry until golden brown.
- Drain on paper towels and serve warm.
