- 12 jumbo pasta shells
- 1 pound shrimp, peeled and deveined
- 4 cups fresh spinach
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups marinara sauce
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the jumbo pasta shells according to package instructions until al dente; drain and cool.
- In a pan, sauté garlic in a little olive oil, then add shrimp and cook until pink. Add spinach and cook until wilted.
- In a bowl, mix shrimp, spinach, ricotta, mozzarella, Parmesan, egg, salt, and pepper.
- Stuff each pasta shell with the mixture and place them in a baking dish.
- Pour marinara sauce over the shells.
- Bake for 25-30 minutes until heated through and cheese is bubbly.
Notes
- Feel free to substitute the shrimp with chicken or vegetables for a different variation.
- For added spice, consider adding crushed red pepper flakes to the filling.
