  • 12 jumbo pasta shells
  • 1 pound shrimp, peeled and deveined
  • 4 cups fresh spinach
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the jumbo pasta shells according to package instructions until al dente; drain and cool.
  3. In a pan, sauté garlic in a little olive oil, then add shrimp and cook until pink. Add spinach and cook until wilted.
  4. In a bowl, mix shrimp, spinach, ricotta, mozzarella, Parmesan, egg, salt, and pepper.
  5. Stuff each pasta shell with the mixture and place them in a baking dish.
  6. Pour marinara sauce over the shells.
  7. Bake for 25-30 minutes until heated through and cheese is bubbly.

Notes

  • Feel free to substitute the shrimp with chicken or vegetables for a different variation.
