  • 1 tablespoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup green onions, chopped
  • Salt and Pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add the onion, bell pepper, and celery, cooking until softened.
  2. Stir in the garlic and cook for an additional minute.
  3. Add the shrimp and cook until they turn pink.
  4. Mix in the rice, chicken broth, Cajun seasoning, thyme, bay leaf, and bring to a boil.
  5. Reduce heat to low, cover, and simmer until rice is cooked.
  6. Remove from heat, stir in green onions and season with salt and pepper.
