- 1 pound shrimp, peeled and deveined
- 1 cup rice
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon Cajun seasoning
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 cup green onions, chopped
- Salt and Pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat. Add the onion, bell pepper, and celery, cooking until softened.
- Stir in the garlic and cook for an additional minute.
- Add the shrimp and cook until they turn pink.
- Mix in the rice, chicken broth, Cajun seasoning, thyme, bay leaf, and bring to a boil.
- Reduce heat to low, cover, and simmer until rice is cooked.
- Remove from heat, stir in green onions and season with salt and pepper.
Notes
- For extra flavor, you can add diced tomatoes or hot sauce.
- This dish can be made ahead and reheated for leftovers.
