Ingredients

  • 4 fillets salmon
  • 1 pound shrimp, peeled and deveined
  • 1 cup breadcrumbs
  • 1/2 cup cream cheese
  • 1/4 cup green onions, chopped
  • 2 cloves garlic, minced
  • 1 lemon (juice and zest)
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine shrimp, cream cheese, breadcrumbs, green onions, garlic, lemon juice, and zest. Mix well.
  3. Slice a pocket in each salmon fillet and stuff with the shrimp mixture.
  4. Season the salmon with salt and pepper.
  5. In a skillet, melt butter over medium heat and then drizzle some over the stuffed salmon.
  6. Place the salmon on a baking sheet and bake for 20-25 minutes until cooked through.
  7. Serve with remaining lemon garlic butter drizzled on top.

  • For extra flavor, marinate the salmon for 30 minutes before cooking.
