- 3 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 bay leaves
- 1 tablespoon cornstarch
- 2 tablespoons water
- Salt and pepper to taste
- 4 slices of bread
- 1 cup mashed potatoes
Instructions
- In a large skillet, heat olive oil over medium-high heat. Sear the beef on all sides until browned.
- Transfer the beef to the slow cooker, and add onion, garlic, beef broth, Worcestershire sauce, thyme, and bay leaves.
- Cover and cook on low for 8 hours or until the beef is tender.
- Once cooked, remove the beef and let it rest for a few minutes before shredding.
- In a small bowl, mix cornstarch with water and stir into the slow cooker to thicken the sauce.
- Serve the shredded beef over mashed potatoes and bread, drizzled with the sauce.

- For extra flavor, add your favorite herbs and spices.
- Make sure to let the beef rest before shredding to maintain juiciness.
