Ingredients

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil

  • 2 bay leaves
  • 1 tablespoon cornstarch
  • 2 tablespoons water

  • 4 slices of bread
  • 1 cup mashed potatoes

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Sear the beef on all sides until browned.
  2. Transfer the beef to the slow cooker, and add onion, garlic, beef broth, Worcestershire sauce, thyme, and bay leaves.
  3. Cover and cook on low for 8 hours or until the beef is tender.
  4. Once cooked, remove the beef and let it rest for a few minutes before shredding.
  5. In a small bowl, mix cornstarch with water and stir into the slow cooker to thicken the sauce.
  6. Serve the shredded beef over mashed potatoes and bread, drizzled with the sauce.
