Ingredients

- 1 pound chicken thighs, boneless and skinless
- 2 cups carrots, sliced
- 2 cups potatoes, diced
- 1 cup celery, chopped
- 1 onion, diced
- 4 cups chicken broth
- 2 teaspoons garlic, minced
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
Instructions
- Place the chicken, carrots, potatoes, celery, onion, garlic, thyme, rosemary, salt, and pepper in the slow cooker.
- Pour the chicken broth over the ingredients.
- Cover and cook on low for 6-8 hours or until chicken is tender.
- Remove chicken, shred it, and return it to the slow cooker.
- Stir well and serve hot.
Notes
- For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir into the stew during the last 30 minutes of cooking.
