- 3 pounds beef chuck roast
- 4 cups chopped vegetables (carrots, potatoes, and onions)
- 2 cups beef broth
- 1 tablespoon garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 tablespoons Worcestershire sauce
Instructions
- Season the beef roast with salt, pepper, and thyme.
- In a hot skillet, sear the beef on all sides until browned.
- Place chopped vegetables in the slow cooker.
- Set the seared beef on top of the vegetables.
- Pour in the beef broth and Worcestershire sauce.
- Cover and cook on low for 8 hours or until the beef is tender.
Notes
- For extra flavor, add a splash of red wine to the broth.
- You can also include other vegetables like celery or parsnips.
