- 1 prime rib roast
- 4 tablespoons garlic, minced
- 1/4 cup fresh rosemary, chopped
- 1/4 cup fresh thyme, chopped
- 1/2 cup unsalted butter, softened
- 2 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon black pepper
Instructions
- Preheat the smoker to 225°F.
- In a bowl, mix garlic, rosemary, thyme, butter, olive oil, salt, and pepper to form a herb crust.
- Rub the herb butter all over the prime rib roast.
- Place the roast in the smoker and smoke until it reaches your desired doneness, about 4-6 hours.
- Remove from the smoker and let rest for 30 minutes before slicing.
