  • 1/2 cup breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup BBQ sauce
  • 2 tablespoons bourbon
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed potatoes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the ground beef, breadcrumbs, onion, garlic, BBQ sauce, bourbon, smoked paprika, salt, and black pepper until well combined.
  3. Form the mixture into cupcake-sized portions and place them in a muffin tin.
  4. Bake in the oven for 25-30 minutes or until cooked through.
  5. While the meatloaf cupcakes are baking, prepare the mashed potatoes as desired.
  6. Once the meatloaf cupcakes are done, remove them from the oven and let them cool slightly.
  7. Top each meatloaf cupcake with a generous amount of mashed potatoes, using a piping bag for a decorative finish.
  8. Drizzle additional BBQ sauce over the top if desired and serve warm.
