- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup BBQ sauce
- 2 tablespoons bourbon
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups mashed potatoes
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the ground beef, breadcrumbs, onion, garlic, BBQ sauce, bourbon, smoked paprika, salt, and black pepper until well combined.
- Form the mixture into cupcake-sized portions and place them in a muffin tin.
- Bake in the oven for 25-30 minutes or until cooked through.
- While the meatloaf cupcakes are baking, prepare the mashed potatoes as desired.
- Once the meatloaf cupcakes are done, remove them from the oven and let them cool slightly.
- Top each meatloaf cupcake with a generous amount of mashed potatoes, using a piping bag for a decorative finish.
- Drizzle additional BBQ sauce over the top if desired and serve warm.
Notes
- For a spicy kick, add jalapeños to the meat mixture.
- Pair the dish with a side of sautéed vegetables for a complete meal.
