  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine grated zucchini, granulated sugar, brown sugar, oil, and eggs until well mixed.
  3. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and sprinkle with additional cinnamon if desired.
  6. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
