Ingredients

  • 2 cups cooked shredded chicken
  • 1 can diced green chilies
  • 2 cups sour cream
  • 1 cup shredded cheese
  • 8 corn tortillas
  • 1 can enchilada sauce
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the shredded chicken, green chilies, sour cream, garlic powder, and half of the cheese.
  3. In a 9x13 inch baking dish, spread a thin layer of enchilada sauce at the bottom.
  4. Layer four tortillas over the sauce, then spread half of the chicken mixture over the tortillas.
  5. Repeat the layering with the remaining tortillas, chicken mixture, and top with the remaining enchilada sauce and cheese.
  6. Bake in the preheated oven for 30 minutes, until the cheese is bubbly and golden.

Notes

  • For a spicier version, add jalapeños to the mixture.
  • Feel free to use turkey or beef in place of chicken.
