- 2 cups cooked shredded chicken
- 1 can diced green chilies
- 2 cups sour cream
- 1 cup shredded cheese
- 8 corn tortillas
- 1 can enchilada sauce
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the shredded chicken, green chilies, sour cream, garlic powder, and half of the cheese.
- In a 9x13 inch baking dish, spread a thin layer of enchilada sauce at the bottom.
- Layer four tortillas over the sauce, then spread half of the chicken mixture over the tortillas.
- Repeat the layering with the remaining tortillas, chicken mixture, and top with the remaining enchilada sauce and cheese.
- Bake in the preheated oven for 30 minutes, until the cheese is bubbly and golden.
Notes
- For a spicier version, add jalapeños to the mixture.
- Feel free to use turkey or beef in place of chicken.
