Delicious and healthy Spaghetti Squash Boats filled with turkey bacon and fresh veggies for a perfect meal.

Ingredients

  • 1 medium spaghetti squash
  • 4 slices turkey bacon
  • 1 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1 cup spinach, chopped
  • 1 cup shredded cheese (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil, salt, and pepper on the squash halves and place cut-side down on a baking sheet. Bake for 30-40 minutes.
  4. While the squash bakes, cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
  5. In the same skillet, add onion and bell peppers, sautéing until soft. Add spinach and cooked bacon and stir until spinach wilts.
  6. Once the squash is done, scrape the insides with a fork to create spaghetti-like strands.
  7. Mix the spaghetti squash with the veggie and bacon mixture. Add garlic powder and cheese, if using.
  8. Stuff the mixture back into the squash halves and return to the oven for 10 minutes.
  9. Serve warm and enjoy!

Notes

  • This dish can be customized with your favorite vegetables.
  • For a vegetarian option, omit the turkey bacon.
