Ingredients

- 1 medium spaghetti squash
- 4 slices turkey bacon
- 1 cup bell peppers, diced
- 1/2 cup onion, diced
- 1 cup spinach, chopped
- 1 cup shredded cheese (optional)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle olive oil, salt, and pepper on the squash halves and place cut-side down on a baking sheet. Bake for 30-40 minutes.
- While the squash bakes, cook the turkey bacon in a skillet until crispy. Remove and chop into pieces.
- In the same skillet, add onion and bell peppers, sautéing until soft. Add spinach and cooked bacon and stir until spinach wilts.
- Once the squash is done, scrape the insides with a fork to create spaghetti-like strands.
- Mix the spaghetti squash with the veggie and bacon mixture. Add garlic powder and cheese, if using.
- Stuff the mixture back into the squash halves and return to the oven for 10 minutes.
- Serve warm and enjoy!

- This dish can be customized with your favorite vegetables.
- For a vegetarian option, omit the turkey bacon.
