- 1 pound rigatoni pasta
- 2 tablespoons Cajun seasoning
- 1 pound chicken breast, diced
- 2 tablespoons olive oil
- 1 bell pepper, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Cook rigatoni according to package instructions; drain and set aside.
- In a skillet, heat olive oil over medium heat. Add chicken and Cajun seasoning; cook until chicken is browned.
- Add onion, bell pepper, and garlic; sauté until vegetables are tender.
- Stir in heavy cream and Parmesan cheese; cook until sauce is thickened.
- Add rigatoni to the skillet; toss to combine with the sauce.
- Garnish with parsley before serving.
Notes
- This dish can be adjusted by adding more or less Cajun seasoning to taste.
- For a spicy kick, consider adding crushed red pepper flakes.
