- 1 pound spicy Italian sausage
- 1 can cannellini beans, drained and rinsed
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- In a large pot, cook the sausage over medium heat until browned.
- Add the onion and garlic, cooking until softened.
- Stir in the tomatoes, cannellini beans, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add spinach and Italian seasoning; cook for another 5 minutes.
- Season with salt and pepper before serving.
