Instructions

- Add chicken thighs and marinate for at least 30 minutes.
- In a pot, combine jasmine rice, coconut milk, and salt; bring to a boil.
- Reduce heat and simmer until rice is cooked and coconut milk is absorbed.
- Grill or pan-fry the marinated chicken until cooked through.
- Serve chicken over a bed of coconut rice.
