Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine corn, cheese, cilantro, and jalapeño.
  3. In another bowl, whisk together eggs, flour, baking powder, cumin, salt, and pepper.
  4. Add the wet ingredients to the dry mix and stir until combined.
  5. Scoop spoonfuls onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes until golden brown.
