- 2 cups corn kernels
- 1 cup grated cheese
- 1/2 cup chopped cilantro
- 1 jalapeño, diced
- 2 eggs
- 1 cup flour
- 1 tsp baking powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine corn, cheese, cilantro, and jalapeño.
- In another bowl, whisk together eggs, flour, baking powder, cumin, salt, and pepper.
- Add the wet ingredients to the dry mix and stir until combined.
- Scoop spoonfuls onto a baking sheet lined with parchment paper.
- Bake for 20-25 minutes until golden brown.
Notes
- For extra heat, keep the seeds in the jalapeño.
- These can be served with sour cream or salsa.
