Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados
  • 1 tablespoon lime juice
  • 1/4 cup diced red onion
  • 1 jalapeño, minced
  • 1 tablespoon chopped cilantro
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • 12 small tortilla cups

Instructions

  1. In a medium bowl, combine shrimp, lime juice, and seasonings. Let marinate for 10 minutes.
  2. Cook the shrimp in a skillet over medium heat until pink and opaque, about 3-4 minutes.
  3. Remove from heat and let cool.
  4. In another bowl, mash the avocados with a fork, then stir in red onion, jalapeño, cilantro, salt, and pepper.
  5. Fill tortilla cups with avocado mixture, then top with cooked shrimp.
  6. Serve immediately and enjoy!
