- 1 pound shrimp, peeled and deveined
- 2 ripe avocados
- 1 tablespoon lime juice
- 1/4 cup diced red onion
- 1 jalapeño, minced
- 1 tablespoon chopped cilantro
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 12 small tortilla cups
Instructions
- In a medium bowl, combine shrimp, lime juice, and seasonings. Let marinate for 10 minutes.
- Cook the shrimp in a skillet over medium heat until pink and opaque, about 3-4 minutes.
- Remove from heat and let cool.
- In another bowl, mash the avocados with a fork, then stir in red onion, jalapeño, cilantro, salt, and pepper.
- Fill tortilla cups with avocado mixture, then top with cooked shrimp.
- Serve immediately and enjoy!
Notes
- Adjust the spiciness by adding more or less jalapeño.
- Can be served chilled for a refreshing treat.
