- 1 sheet puff pastry
- 2 cups fresh spinach, chopped
- 1 cup ricotta cheese
- 1/2 cup feta cheese, crumbled
- 1 egg, beaten
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Roll out the puff pastry on a floured surface.
- In a bowl, combine spinach, ricotta, feta, egg, olive oil, garlic powder, salt, and pepper.
- Cut the pastry into squares and fill with the mixture.
- Fold the pastry over and seal the edges.
- Place on a baking sheet and brush with egg wash.
- Bake for 20-25 minutes or until golden brown.
Notes
- These can be made ahead of time and frozen before baking.
- Feel free to add other herbs or cheeses to the filling.
