Ingredients

  • 2 cups fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 3 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package puff pastry (2 sheets)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine spinach, ricotta, mozzarella, Parmesan, eggs, garlic powder, onion powder, salt, and pepper.
  3. Roll out puff pastry sheets on a floured surface and cut into squares.
  4. Place a spoonful of the spinach and cheese mixture in the center of each pastry square.
  5. Fold the pastry corners over the filling and seal well.
  6. Place on a baking sheet and brush with egg wash.
  7. Bake for 25-30 minutes or until golden brown.

Notes

  • Serve warm or at room temperature.
  • These squares can be made a day in advance and reheated before serving.
