Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the grated sweet potato, pressing it into the bottom and sides of a pie dish to form the crust.
- Bake the crust for 20 minutes until slightly set.
- In another bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
- Add the chopped spinach and crumbled feta cheese to the egg mixture.
- Pour the filling into the pre-baked sweet potato crust.
- Bake for an additional 25-30 minutes until the filling is set and golden.
- Let it cool for a few minutes before slicing and serving.

- For an extra flavor boost, add herbs like dill or parsley to the filling.
