- 4 medium sweet potatoes
- 2 cups fresh spinach
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh herbs (basil, parsley, or dill)
Instructions
- Preheat the oven to 400°F (200°C).
- Bake sweet potatoes for 45-60 minutes, until tender.
- In a pan, sauté spinach in olive oil until wilted.
- Combine spinach, ricotta, Parmesan, garlic powder, salt, and pepper in a bowl.
- Once sweet potatoes are done, cut them open and fill with the spinach ricotta mixture.
- Drizzle with fresh herbs before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes to the filling.
- These sweet potatoes can be prepared ahead and baked just before serving.
