Ingredients

  • 4 medium sweet potatoes
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh herbs (basil, parsley, or dill)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bake sweet potatoes for 45-60 minutes, until tender.
  3. In a pan, sauté spinach in olive oil until wilted.
  4. Combine spinach, ricotta, Parmesan, garlic powder, salt, and pepper in a bowl.
  5. Once sweet potatoes are done, cut them open and fill with the spinach ricotta mixture.
  6. Drizzle with fresh herbs before serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the filling.
  • These sweet potatoes can be prepared ahead and baked just before serving.
