- 6 large eggs

- 1 cup diced bell peppers

Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, beat the eggs with salt and pepper.
- In a skillet, heat olive oil over medium heat.
- Add onions and bell peppers, sautéing until soft.
- Stir in chopped spinach and cook for another minute.
- Pour the egg mixture into the skillet and cook until edges begin to set.
- Sprinkle the grated cheese on top.
- Transfer the skillet to the oven and bake for 15-20 minutes until the frittata is puffed and golden.
- Let cool slightly before slicing and serving.
