Ingredients

  • 4 large russet potatoes
  • 1 pound steak, cubed
  • 1 pound shrimp, peeled and deveined
  • 8 ounces mushrooms, sliced
  • 1 cup cheese, shredded
  • 1/2 cup sour cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then prick them with a fork. Bake for 45-60 minutes until tender.
  3. In a skillet, heat olive oil over medium-high heat. Add steak and cook until browned, then remove and set aside.
  4. Add shrimp and mushrooms to the skillet, cooking until shrimp are pink and mushrooms are tender.
  5. When potatoes are done, slice them open and fluff the insides with a fork. Season with salt and pepper.
  6. Top each potato with the steak, shrimp, mushrooms, cheese, and sour cream.
  7. Garnish with chopped green onions before serving.
