- 4 large russet potatoes
- 1 pound steak, cubed
- 1 pound shrimp, peeled and deveined
- 8 ounces mushrooms, sliced
- 1 cup cheese, shredded
- 1/2 cup sour cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 green onions, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then prick them with a fork. Bake for 45-60 minutes until tender.
- In a skillet, heat olive oil over medium-high heat. Add steak and cook until browned, then remove and set aside.
- Add shrimp and mushrooms to the skillet, cooking until shrimp are pink and mushrooms are tender.
- When potatoes are done, slice them open and fluff the insides with a fork. Season with salt and pepper.
- Top each potato with the steak, shrimp, mushrooms, cheese, and sour cream.
- Garnish with chopped green onions before serving.
Notes
- For extra flavor, try adding garlic to the sautéed mushrooms.
