- 2 pounds chicken thighs
- 1/2 cup bourbon
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 cups cooked rice
- 1 cup mixed vegetables
- 2 tablespoons green onions, chopped
- 2 tablespoons vegetable oil
Instructions
- In a bowl, mix bourbon, brown sugar, soy sauce, garlic, and ginger.
- Marinate the chicken thighs in the mixture for at least 30 minutes.
- Heat oil in a skillet over medium heat and cook the chicken until golden brown.
- Pour the remaining marinade into the skillet and simmer until the chicken is cooked through.
- In another pan, stir-fry the mixed vegetables and cooked rice.
- Serve the chicken over the fried rice, garnishing with chopped green onions.
Notes
- For a spicier version, add red pepper flakes to the marinade.
- Use leftover chicken for a quick fried rice dish the next day.
