  • 2 pounds chicken thighs
  • 1/2 cup bourbon
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 cups cooked rice
  • 1 cup mixed vegetables
  • 2 tablespoons green onions, chopped
  • 2 tablespoons vegetable oil

Instructions

  1. In a bowl, mix bourbon, brown sugar, soy sauce, garlic, and ginger.
  2. Marinate the chicken thighs in the mixture for at least 30 minutes.
  3. Heat oil in a skillet over medium heat and cook the chicken until golden brown.
  4. Pour the remaining marinade into the skillet and simmer until the chicken is cooked through.
  5. In another pan, stir-fry the mixed vegetables and cooked rice.
  6. Serve the chicken over the fried rice, garnishing with chopped green onions.
