- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, sliced
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another bowl, beat the eggs and sugar until light and fluffy. Add the vanilla extract.
- Gradually add the dry ingredients to the egg mixture until just combined.
- Spread the batter evenly in the prepared baking pan and bake for 10-12 minutes.
- Once baked, invert the cake onto a clean kitchen towel sprinkled with powdered sugar to prevent sticking. Roll the cake tightly, using the towel to assist, and let cool.
- While the cake cools, whip the heavy cream with powdered sugar until soft peaks form.
- Unroll the cooled cake, spread the whipped cream and sliced strawberries over the top, and gently re-roll the cake.
- Chill the cake roll in the refrigerator for at least 1 hour before slicing and serving.

- Ensure the cake is cooled completely before unrolling to prevent cracking.
- Serve with additional whipped cream and strawberries for garnish.
